I love lasagna. I think I've made that pretty apparent in past postings (click "lasagna" on the tag cloud). But this one...oh boy. This one is a monster. I used 'Furky Italian Sausage, burger crumbles, pistachio pesto, a rich, white wine bechamel, and a hearty marinara. I highly recommend using boiled noodles for a lasagna this rich, because oven-ready ones don't soften up quite enough in a fat-heavy dish. I had one piece, and I don't think I can move much for the rest of the day. I did think ahead and placed a cookie sheet under the pan in the oven, because it did, in fact, erupt a little.
I don't know why I do this to myself every MoFo. My best friend even said, "Why don't you do a week of healthy recipes?" BORING. Would you rather look at a plate of brown rice and steamed vegetables, or a tower of Daiya, pasta, and processed faux meats? Would you rather hear me talk (rather self righteously) about how healthy vegan diets are and how I am such a perfect person? Hell no. You want to show a picture of a giant slab of Monster Lasagna to your "tasty tasty murder"-joke making coworker douchebag and have him say, "Whoa. I'd eat the hell out of that."

This is why you're [a] fat [vegan].
This has been a rough week. I didn't lose any weight, and I totally deserved not to. My special someone is out of town working until Memorial Day weekend, also. Without going into detail, I've been eating some stuff that I know I shouldn't even have in the house.
But then I saw this, and knew it was my duty to make it vegan. I'd already done the Lasandwich, and also had fun with Lasagna Cupcakes, so I needed this as the final chapter in the lasagna-stunt-food trilogy.
I started with a plain pizza crust from the Wedge. I covered it in Muir Glen pizza sauce. Layered on some whole wheat oven-ready lasagna noodles, tofu ricotta, spinach, Upton's Italian sausage, more sauce, Daiya mozzarella, and some Yves pepperoni. I thought of layering more, but I was working with a pizza stone instead of a dish, and I also wanted it to retain it's handheld-pizza-ness and not have it become a mess. Here's the final result:
Vegan Pizzagna!
Buh. Normally, I can eat an entire pizza without so much as a breath. I had one piece of this and I'm stuffed. Uncomfortably stuffed. I'm scared to find out how many Weight Watchers points this is. It might break the site.

Stunt Week Day 5: The Lasandwich
I read about this thing online, and all I could think was, "How could they do something so wrong to something as awesome as lasagna?"
It's available at UK supermarket, Tesco, and here is the description:
"Between two thick slices of white bread, you'll find a generous filling of diced beef in a tangy tomato and herb sauce, layered with cooked pasta sheets and finished with a creamy cheddar, ricotta and mayonnaise dressing."
Seriously? You call that a lasandwich?
Now this is a Lasandwich.
Vegan lasagna on garlic toasted French bread. This was about four meals.

17th Annual Turkey-Free/Healthy Harvest Thanksgiving Potluck
Join us on Sunday, November 21 at 5:00pm at Lake Harriet United Methodist Church, 4901 Chowen Ave. S. in Minneapolis for this fun (and filling) event. We had well over 100 people attend last year, and the buffet line was simply amazing.
Please bring a vegan dish (side/main) or dessert to share with others, preferably organic (vegan=no meat, dairy, eggs, gelatin, honey or refined sugar). Also bring a serving utensil, a copy of the recipe/ingredients to set by your dish, your place-setting (plate, cup, utensils).
And, special thank to Turtle Island for donating a Tofurky roast for the event. :)

Lasagna.
I need to plan ahead so I have a week of Lasagnas during next year's MoFo.
Anyway, I used half lasagna noodles, half sliced eggplant. There's some onion and Isa's cashew ricotta and maybe a Tofurkey Italian Sausage, and a whole lot of FYH mozzarella.
It tastes better than it looks, believe me. I've taken over ten pictures of this thing and it's just too hard. It's like trying to find Dick Cheney's "good side."
Tomorrow's Friday. Saturday I shall start the last theme week for VeganMoFo 2008. Hang onto your seats, bitches.
No, it's really not that big a deal.
